What is your favorite game fish...

What is your favorite game fish to catch and actually eat. Many sport fishermen only like to catch and release their catch unless it is of trophy quality. I frankly like to eat what I catch and my favorite is the "true" multi-colored Dolphin; not to be mistaken for a bottle nose porpoise. To me the flavor is out of this world when slow BBQ'd over a Kiawe (mesquite) fire. To me it is simply marvelous.

That would have to be Snook. They are found in coastal Florida in both brackish and salt water. They are very strong, very smart and VERY tasty. These days you can only fish for them at certain times as they were over fished for a long time.
